  1. Modern gluten is not well tolerated by larger numbers of people since changes in agricultural manipulations that began in the late 1950s. Modern gluten contains a peptide that was virtually non-existent in wheat prior to changes in wheat to make it a sturdier and higher yield plant. These higher yield whet crops also have far less High-yield wheat varieties have less zinc, magnesium, iron, copper and selenium.
    Bottom line – we most of us ought to be demanding more corn and a return to more nutritiously balanced ancient wheat plants.
